Shrimp Gazpatho

6 tsp. lemon juice

2 garlic cloves

3 cup finely chopped tomatoes (about 6)

2 cup fresh tomato juice

2 cup finely chopped cucumbers (about 2 large)

1/2 cup finely minced onion

1/2 cup diced green pepper

1/4 cup minced parsley

2 tsp. chopped chives

salt to taste (about 2 tsp)

1/2 tsp hot sauce

1/3 cup olive oil

 

Rub bowl with garlic clove.  Put shrimp with lemon juice in a bowl and put in icebox while fixing the rest of the ingredients.  Add rest of ingredients.  Serve in soup bowl over ice cubes.  Serves 6-8 with more than 1 serving per person.
